I created my first cheesecake in high school

over 15 years ago. I had taken home economies as a subject and my challenge was to make an egg-less dessert. I scoured the web via my dial up internet for days and I came across this recipe which has remained with me ever since.

I cannot remember the countless times I have made cheesecake for friends, families and endless amounts of special occasions across various countries. At university, every occasion with my flatmates was celebrated with a cheesecake. During my short spell in Paris, I made this cheesecake for one of my closest and dearest friend; Julien. Since that day, I have to make him a cheesecake every time we meet.

Over the past 15 years, I have expanded the flavour range from a mere strawberry cheesecake to silky white chocolate and very berry raspberry, exotic coconut and kesar mango, decadent chocolate and Nutella, spiced chai latte and nutty pistachio and list continues.
